Ingredients:

  • 250 grams pork belly or pork loin, thinly sliced

  • 2 tablespoons shrimp paste (kapi)

  • 2 tablespoons vegetable oil

  • 3 cloves garlic, minced

  • 2 shallots, thinly sliced

  • 1 red chili pepper, sliced (optional, for spiciness)

  • 1 cup stink beans (sator beans), peeled and cut into 1-inch pieces

  • 1 tablespoon fish sauce

  • 1 tablespoon oyster sauce

  • 1 teaspoon sugar

  • Fresh Thai basil leaves for garnish

Instructions:

  1. Heat the vegetable oil in a wok or large frying pan over medium heat.

  2. Add the minced garlic, sliced shallots, and red chili pepper (if using) to the hot oil. Stir-fry for a few minutes until they become fragrant and slightly softened.

  3. Add the thinly sliced pork to the wok and stir-fry until it is cooked through and lightly browned. Ensure that the pork is evenly cooked.

  4. Add the shrimp paste (kapi) to the wok and stir-fry with the pork for a minute or two until the aroma is released and it coats the meat.

  5. Add the stink beans (sator beans) to the wok and stir-fry for a few minutes until they are cooked but still slightly crunchy.

  6. In a small bowl, mix together the fish sauce, oyster sauce, and sugar. Pour the sauce mixture over the ingredients in the wok. Stir well to coat everything evenly.

  7. Continue stir-frying for a couple more minutes until the flavors have melded together and the stink beans are cooked to your desired texture.

  8. Taste the dish and adjust the seasoning if needed by adding more fish sauce, oyster sauce, or sugar.

  9. Remove the wok from heat and transfer the Pad Moo Kapi Sator to a serving dish.
